Our fish undergoes a proprietary process of conditioning over time in specific environments, which naturally purges the product of its excess moisture that consists of slim, blood and other impurities that makes fish fishy. The result is proven with improved texture, flavor and clarity in taste. All of our fish is of the highest grade and the Branzino is raw consumption ready; Perfect for grilling or crudo!
